Where is the best town to visit to experience authentic cajun culture in Louisiana?

We will be in New Orleans, but I want to explore some other areas for a couple of days...The French Quarter is great, but on this trip I'd like to branch out....any suggestions of towns close to NO? Real cajun bayou country? I like to explore new places and get a feel for the local color. Thanks for any suggestions.
 
Sandy hit the nail on the head. Lafayette (or Hub City as they call it) is central cajun country. While you are there, you can visit Vermillionville or Acadian Village to get a taste of historical Cajun living.

You can also venture off to nearby towns like Breaux Bridge, Opelousas, Henderson, New Iberia, Abbeville, etc, to experience true Cajun living.

Don't be surprised if someone there calls you "cher".
 
Head West on I-10, past Baton Rouge. Real cajun is in Lafayette and the surrounding towns. Lafayette is about 2 1/2 hrs drive from New Orleans.
The food is awesome and the people are very friendly. Some of them still speak cajun french. I'd look for a Bed and breakfast - should be easy to find.

Also check out Breau Bridge, St. Francisville, Opoulsas or any of the little towns around that area. You might even find a festival. Google Acadia or Cajun.
Take a trip along river road and check out some plantations.
