Where do i set up camp while hiking?

Sheltered from the wind, near water if possible, slightly higher ground so you can stay dry if it rains in the night. Stay above the high water marks of rivers and streams even if they are dry. The water can rise rapidly if it rains even from storms upstream that you don't even know about.

It depends on where you're hiking. Where I live, there are rules about camping on state and federal land. If you're on an established trail that allows camping, there are usually set camp sites along the way. Find a guide book or website with info about the trail, and see what it says.
