Where can I get chicken fat?

If it's sold as schmaltz it's going to be about $5/lb or more. It's
totally not worth it. Lard is pork fat, usually sanitized and useless
unless you get it from a Mexican carniceria.

The classic for me is a squirt of fresh lemon and a dash of hot sauce

How the Hell would I know?

Besides, I'm still baffled by your previous post. Not once in 60+ yrs
of living all over the USA, have I ever once seen "chicken backs" sold
as such. Not to say it isn't done, but I've yet to shop in the Possum
Sweat Holler General Store.

Yeah - that's why I unsuccesfuly tried to say it (chicken vs pork fat)
was a totally different product. Agreed, it's cheaper to buy a 'bird'
and render its schmaltz (sp?) at home than to buy it at a store!

Sky, who's never bought chicken fat (does bacon count as pork fat?)

It was way after I was there... Probably just last year when we talked
about it. And we decided that if I got back to Richmond, I would
indeed go out and try oysters with you.

I never grew up eating much seafood....oddly enough. And when I was
living in the DC area, I had much more access to it... It wasn't til
then that I had my first lobster (actually had them in Maine), had my
first steamer clams (which also took a substantial amount of liquid
refreshment for me to eat one), then mussels. And crabs...spent many
nights eating steamed crabs. Never got interested in
oysters..mainly cause of how they looked, and the texture.

However, that was about 30 years ago...and maybe I could eat one
now... ;)

Oh, no really? Gaaa! Pretty soon hubby won't be able to eat anything
if it keeps going at this rate. He's already given up all shellfish
because it triggers his gout (he can't cheat) and red meat because of
the saturated fats (he cheats every now and then).

Purines and gout.... not fun. If he'll take a pill, he should. Mine

Correct, purines are linked to gout, and a low purine diet can be
part of gout maintenance. I prefer to go with the low purine diet
so that my medication dosage can be lower.
