I have been taking this drug since it came out and every doctor I have ever heard of said that you have to take it about 30 before you eat because for the drug to work it has to break down in your gut and then get absorbed where it will make its way into your blood stream and that is when it will start having an effect on the amount of acid in your stomach. Some heartburn medicines break down rapidly and start working as soon as they get into your stomach, but Omeprazole is not like that. Those drugs deal with acid that is already in your stomach and Omeprazole stops your body from producing acid in the first, and for that you need to plan ahead and take it a half hour before you eat something. I am not a doctor though, and I cannot give you medical advise. This is just an explaination off how this drug works. You should get advice from your doctor for what you specifically should dold do in this situation.
