When frying calamari, do you HAVE to cook it so that it is submerged in oil?

I was wondering if I can cook it in shallow oil and just sir and flip the pieces until they're golden brown instead of filling a pan about 3 inches deep with oil.
 
You can quickly saute calamari in just a small amount of oil. Just make sure the pan is very hot, and don't cook it very long. It will get tough if overcooked.
