Have you ever not looked at the person serving you?
I saw, in a movie, a woman say to somebody who had placed a plate in front of her, "I didn't order another one." And after looking up, "Oh what are you doing here?"
It got me thinking, how easily somebody could poison somebody, in such environments...if you just take a plate without really seeing who put it there
Another movie I saw that very night had a girl finding glass in her food.
 
Etiquette actually used to say...and may still, but what do I know...that you are not to acknowledge the staff at any time, be it a private home or restaurant. I know that if I'm nice to the waitstaff, I get treated much better. I get treated better and they get a better tip. It all works.
