Try marinading it in spices and serving with a sweet potato.

i've recently felt the same & have tried a couple of new ones

Black Halibut was delicious & Red Snapper is gorgeous

not sure about the bones but i always ask them to fillet the fish anyway
but you should keep the skin especially on Red Snapper
 
1 ) Cod baked with half 'n ' half in oven , you can surround with vegetables or finish with cheese on top .
2 ) Arctic Char , depending where you live this may be difficult to get . If you can though it is very similar to salmon and you can prepare it in same ways .
3 ) Marlin steaks , another one may be difficult depending on where you live . If you can get it , prepare first time like a steak . Pan sear season and finish off in the oven . Incredible . When I can get it I buy extra to freeze .
4 ) Swordfish , marinade and grill , also turns out well on GF grill. Also do it like the marlin as well .
5 ) stripe bass , cut into pieces . With 2 bowls in one place lemon juice and white wine . In second place bread crumbs , parmesan cheese and an assortment of seasonings .
Dredge in the wine , then in crumbs , place on baking sheet and spray . Bake at 400 till almost golden , slightly crisp .
 
scampi is really nice wholetail,

its just like shrimps but in batter they can be enjoyed with tartar sauce
