What's the right way to explain to a vegetarian kid why they can't eat x,y,or z?

My daughter is almost 4 and I am raising her to be vegetarian. I myself have been one for 15+ years.

When she started asking for things with gelatin, I explained to her we couldn't eat them. When she kept asking why, I said because that has animals in it and we don't eat animals. Seemed like ok explanation at the time. But one time she saw her grandpa eating a yogurt (w/gelatin) and she recognized the brand as one we don't eat and she got REALLY upset! "Grandpa, you can't eat that! There's animals in there! We don't eat eat animals they are our friends. If we eat them they'll get a boo boo and then they'll be really sad."

I don't want to break her little heart when she sees other people eating non-veg. How do you explain the concept to your kids??
