I'm trying to learn how to cook fish. Actually, I'm trying to learn how to cook! I really don't know what I'm doing. I just finished cooking a frozen fillet that I thawed out overnight in the frig, and it didn't turn out well at all.

I did the simplest thing I could think of: I added some oil to the plan, turned the heat on and let it cook. I'd say I let it cook about 6-7 minutes, which I've read is the average time to cook. After that, I took it off of the heat and tried it out but it didn't seem very warm inside. Also, while I was cooking it, it started breaking up and sticking to the pan. And it also shrank considerably, almost 1 1/2 inches in length from when it was thawed to when it was "cooked".

So on the one hand it wasn't totally cooked but on the other, the heat was making it break apart and stick so bad that I don't think it would have survived much longer.

I'm going to try it again tomorrow, but I'd like some advice before I try it again.
