What's the difference between yellow, red, and green bell peppers?

What's the difference in taste? I don't like green bell peppers but I was told the yellow and red ones are sweeter.

Also, I know some peppers start out one color but get darker or change the longer they stay on the vine, so are different colored bell peppers the same variety harvested at different times, or are they completely different varieties?

The only difference is sugar content and color. Some dishes you make may look better with a red or orange pepper. Some may need less sweetness.

Green being the cheapest and least sweet of the bell peppers.
Yellow being the most expensive and sweetest
Red is sweet, but its got a very strong bell pepper flavor. My favorite.
Orange is hardest to find but is still sweet. Great fresh on salads.

There are many varieties of bell pepper and the red and yellow ones have been allowed to ripen, so they do taste a little sweeter. Some bells don't turn color, but the purple, red, yellow, orange ones you see in the store are those colors just because they're ripe. Try one, you might like it!
