Whats the best way to cook duck?

I have some duck breasts...... Is duck dark meat? These are fist sized and the color of raw beef liver. I was given it by a my father in law who got it from a buddy and took it to be polite but doesn't eat game. So now I got a couple of freezer bags full and I want to know a good, quick, easy way to cook 'em up

Breaded and fried. Breaded and baked, Shake and bake. Pan fry. Cut into small cubes and brown in a skillet add rice and vegetables continue cooking.
