Whats it mean when i catch a guys eye across the restaurant?

i will be sitting at dinner eating and i look up and i will see some guy staring at me and make eyecontact all the way across the restaurant. and then i just look away real quick. whats this mean and what do i do when it happens?
 
This could mean the guy is just looking around the restaurant, or it could be that he is interested in you. If you desire further contact, you should smile and acknowledge the eye contact, then see where it goes.
