What's a good recipe to cook with mint...?

Make a Mojito.
Crush mint leaves with sugar syrup in a tall glass.
Add 2 oz. lime juice, 2 oz. white rum, fill with ice cubes and top with sparkling soda.
 
Mint tea is the obvious one with a little honey or agave (if you prefer it sweeter). It goes well to if a few leafs are shredded or chopped up very, very fine and added to a juice like raspberry, cranberry, strawberry (or a dark berry type of fruit, rather than orange or so),
