from Alabama? I meet her a few weeks ago while I was up there now she's here in Alabama. Want to make her something special.
BBQ? Well if you say so but BBQ isn't that special.

Baked chicken. put the chicken pieces on a cooking tray. slather with lemon juice, drizzle with some melted butter. Sprinkle with salt and pepper, paprika, and a sprinkle of sugar. Bake at 400, covered, for 40 minutes, remove the tinfoil and bake an additional 20 minutes.
Serve with a salad, and a baked potato. You can bake the potato in the oven with the chicken. Just scrub the potato, poke it with a fork (to prevent it from exploding), and stick it in the oven when you begin baking the chicken. Serve the potato with butter, sour cream, and dill weed or tarragon.
 
Spaghetti with meat sauce. Don't be afraid of the garlic if she is Greek.

I would respectfully suggest that you don't try anything greek, it will be hard to compare with mom/grandma/aunt maria's cooking.

Shrimp scampi is another great dish, and not hard. Serve with rice and some steamed asparagus.

Cheese fondue is a romantic and leisurely meal. Pair with a simple salad and a nice white wine.
