What would you cook on the extra low setting of your cooktop?

Thermador cooktops have an extra low setting for cooking really delicate foods such as melting chocolate. I think what it does is automatically turn the flame on for about a minute, shuts off by itself for a few seconds, and turns back on again so it stays at a very slow temperature and uses radiant heat. What other delicate foods could you cook on this setting besides chocolate and for keeping foods warm before serving?
 
When I hard boil my eggs, I first bring them to a boil then I turn the heat down to the extra low setting and leave them for 13 minutes. The yolks come out so fluffy when I do them that way.
 
There are some sauces that you have to be careful with -- I think bearnaise is one. Also, if you're making something with eggs, like Spaghetti Carbonara, you'd want a little gentle heat.
