What would make a good car audio system?

I am new to car audio and am planning on installing my first system within the next couple of months. I am planning on buying a used McIntosh Amp somewhere between 700$-1000$. My first question regards what kind of speakers i should pair with a high end amp as such. I've found a couple of pairs of Focal poly-glass speakers that i think look well and am wondering if they would be sufficient. This brings me to my second question. The nominal power wattage on these speakers is about 70-80 watts with maxes at 140-160 watts and I am torn between a 4channel amp at 100 watts each or a 6 channel amp at 50watts x 4 and 100watts x 2. Will that extra 50 watts make a large sound difference for the speakers? I don't plan on buying a subwoofer just yet as the 6x9 speakers will provide enough bass for me, but I will eventually in the future. Also, what would be a good deck to buy that would provide excellent cd audio quality but that is also cost efficient. I'm not trying to spend 1000$ for a Mac car deck that can't even fast forward or rewind. Thanks in advance :)
All power ratings i've provided are at 4 ohms impedance; Speakers and Amp.
