What to plant in a garden that will mainly be operational from Sept-May?

I work at an after school program at an apt complex during the school year (late august to early may) and I thought it would be neat to get a community garden started there with the kids, but I don't know if there would be anything that we could plant that wouldn't need the most work during late spring and early summer, when I won't be in the area.

I don't know how many parents would be on board to work on it over the summer, but I doubt that many, so is there anything that we could plant in early spring that wouldn't need much work after April? Or that we could start in early september?
 
It entirely depends on where you live and what the climate conditions are. Most gardens grown best in the summer when apparently you will not be around to look after it. Also, are you planning an ornamental garden or a vegetable garden?
