I'm having my second date with a guy and we're going hiking so I thought it might be nice to surprise him with a little lunch. What are some good ideas for things to bring/make?

That is a great idea, and truly it is the way to a man's heart. I suggest you make a white cake with a lot of vanilla. You can get a cake mix and add yogurt instead of plain milk or water, add an extra egg, and get some real vanilla and just a very small sprinkle of cinamon. Add quite a lot of the vanilla and the tiny bit of cinamon before the eggs so you can taste it to make sure you have enough. The vanilla is a love potient...trust me.
Then make a bunch of finger food, like chicken fingers, cheese and crackers, grapes, cut up celery and carrot sticks. Just make it simple and easy. Don't forget a lite blanket to sit on. Put it in a little backpack and he can carry it to a look-out point. You might add a thermos of green or white tea. Have fun!!!!

Something easy, nutritious, small, and energizing. So I'd suggest some cereal bars of some sort (something that wont melt or be squished), beef jerky, dried fruit, nuts, and water. You'll want to travel light which is why I'm not suggesting stuff like sandwiches and apples, bulky stuff.
Where are you going to carry wine, cake, and sandwiches!? Wine is heavy and dehydrating, not to mention dangerous. Cake? Stupid! And sandwiches, may be a good idea if you plan on taking a backpack. I wouldn't suggest anything with cheese and meat though because cheese will melt and the meat won't stay good for long periods of time under high temps.
Also if you gorge yourself on sugery and salty foods, that'll just make you groggy and will be too heavy in your stomach. Not a good combination when hiking.

crisps
sandwiches
juice
water
fruits
biscuits
crackers
fruit and cereal bars

depends on if you're going back to the car to eat or not here's some ideas:

cucumbers
carrots
ranch dressing
chips
salsa & tortilla chips
guacamole
pickles/pickle spears

sandwiches - lunchmeat
oberle
fried chicken
tortilla roll ups
subway sandwiches

Fruit/dessert:
frozen fruit will thaw well while you hike before you eat
cakes
cookies
brownies

Think of it this way, your going hiking, already your back pack will have some weight. You don't go hiking swinging a basket full of stuff.

I would look at breaded chicken wings and drums baked, well drained when you take them out of the oven, wrap in foil, make a potato salad just a small approximately 5" X 5" container should be enough for two of you.

Also pack two hard plastic glasses or goblets, you can buy those 1/2 bottles of bubbly (sparkling wine) May also be good to have a couple of pieces of fruit each, I would keep to crisp apples and oranges.

Bring things that don't spoil like peanut butter sandwiches. Cut them up with a cute cookie cutter to make them special. Then bring brownies, apples, trail mix and bottled water. After putting the sandwiches in baggies, wrap each in a colorful bandanna. Then you will have either a napkin, or a place matt, or use it for a sweat band later.
