What size bike should I have? I am not quite 5'1?

I am a newbie to adult mountain biking, and recently bought an inexpensive adult bike with 26" tires. The size below that were the 24's, which were designated as for "youth" sizes. However, I cannot stand with the bike without leaning over considerably to reach the ground on one side, and feel like I'm jerking when I'm peddling, because I have to nearly straighten my legs to get a full cycle. I also think I might be sitting up a little too straight on it. I'm going to exchange it; what should I aim for? Keep directions simple, please!

Take the bike back and then go to a bike shop and get fitted for a bike. You should have a frame that is 59% of your inseam length. They will have 26 inch wheel bikes that will fit you. If you get another department store bike you may have to go with the 24 inch wheels.

On a mountain bike. You should be able to stand off the seat with an inch to four inches clearance to your crotch.

See a bike shop to get fitted properly.
