what should slow cooked beef look like?

i made a stew today with cubes of beef, my bf put it in at around 10am and i took it out at around 6.15pm and it was on a medium setting. I have been eating it and noticed that the meat is very hot but still a little pink in the middle, not like bright pink just very pale pink.
Does this mean ive just ate uncooked beef or is it cooked because its been on for a very long time.
 
Beef can go quite pinky when slow cooked especially by comparison to the darker outside. Dont worry anyway, you can eat beef raw if it's fresh enough. Look at the french and their steak tartar, or the italians and their carpaccio. Having said all that from the amount of time it was cooked for I am sure it would have been cooked. Wasit tender or was it still a bit chewy. If it was tender then it would have been done.
 
I notice that many recipes calling for meat require braising in a pan before adding to the slow cooker pot.

Fish out and place some of the pieces in the microwave and see if the color changes and if red juice flows out of it..
