thats supposed to read pepper & blueberry jus...
I have a masterchef audition & I have 2 ideas of what I would like to cook.
1) A caramelized onion, goats cheese & spinach tart with a sour cream pastry accompanied with creme fresh & roasted beetroots glazed with vinna cotto.
2) Seared kangaroo fillet with a pepper & blueberry accompanied by sweet potato mash & a bitter green salad.
I am favoring the tart because I would really like to be a pastry chef & I think it shows a little versitility to do a savory dish. However I cook kangaroo really well & I don't think many other people would choose to do that.
What do you think?
I'm in Australia. Kangaroo is actually rarely served in Australia though. I really like the idea of using indigenous ingredients, I'm really into the slow food movement.
