What should I cook my fiance for our anniversary?

By the time I see my fiance', it will have been more than 2 months since we've been together. He has a crazy work schedule, but he set aside an evening for us to celebrate. Instead of going out and spending WAY too much money on a nice meal (and since I love to cook), I figured I could make us dinner. I'm just having a hard time coming up with something original that will blow his mind. He's a southern boy, so he loves his meat, but he's not adventurous (doesn't like me to stray much from the basics). Any suggestions? I want something hearty that is totally new. Thanks!
 
My fiance likes the basics too ... although I prefer to stray a little when cooking. One meal that I have made a few times for a romantic dinner was mini red potatoes baked in the oven and drizzled with olive oil and herbs (rosemary, thyme, parsley). Then with that I served asparagus and steak. You could even pick up some filet mignon at your butcher if you want a fancy meal. This is a meal that you would see in a restaurant but can make much more cheaply if you cook it at home ... and it tastes just as good!

Another thing that I like to cook that's still "meat and potatoes" is steak and sweet potatoes. My fiance likes it when I mash half and half of sweet potatoes and yellow potatoes with cheddar cheese and a bit of butter, milk, and sour cream. Sometimes I throw in some chives too. Really easy to make, and actually I prefer it to regular mashed potatoes. It also adds a little bit of color to your plate with the orange of the sweet potatoes mixed in.

EDIT: Just recalled another recipe my fiance loves that I have made several times ... you said your fiance is a Southern boy so he may like this one. I make homemade large meatballs and cook them in the slow cooker with a Sweet and Sour sauce. I like to tell my fiance that the sauce is "made from scratch" but really it's just half and half of chili sauce and grape jelly. It sounds kind of strange to be using grape jelly ... but it tastes so good! My fiance can't get enough of it.
