What should I cook for a second date with a country boy?

this is a Canadian country boy.. not the US shrimp n grits or cowboy chili type. pretty timid about trying new foods, though he DID eat the goat cheese with his roast chicken last dinner out (and hated it).

simple pastas, meat and potatoes, etc. I was thinking about making chicken Parm since most ppl enjoy it, but it takes about an hour from start to finish and I'm going to be pressed for time.

any ideas for something fast and easy on the palate? I've been to culinary school and worked in restaurants so technique isn't an issue, just time and his sort of fussy eating. I want to give him some good home cookin' comfort-type food.
I'm getting home from work at 5:30 and we're eating at 7 and I'd like a minute or two to put some makeup on, not really the time for a roast dinner..
man this site is getting wierd you can't say anything without ppl jumping all over u. I am aware ppl don't generally eat grits and chili, I was just explaining the type of country boy I'm dealing with. save ur wtfs.

oh and when did I ask for dating advice? this guy has been chasing me for years if that has anything to do with cooking and recipes, which it doesn't. sigh.
