What Rice Side Dishes Can I Make With Rice I've Already Cooked?

I have a big batch of cooked brown rice sitting in my fridge, and I want to make some sort of pilaf to go alongside with some salmon . . . but I always feel like you need to start with uncooked rice to make pilaf, and about the only thing you can make when it's been cooked is fried rice.

Does anybody have any recipes to make a side dish starting with cooked rice? Thanks!
 
Mushroom rice Pilaf

2 tablespoons butter
Use canned or fresh mushrooms
1 medium onion, chopped
1/2 cup chopped celery
2 tablespoons chopped garlic
1 tablespoon freshly chopped parsley
1 medium tomato, seeded, diced
1 cup long-grain rice,
chicken broth

Saute onions,garlicand celery in butter.
Add tomato,parsley and mushrooms.
Add rice and chicken broth to moisen and flavor
Season to taste
Serve hot
 
You could make a very nice salad.
Ingredients

8 ozs (200 grams)cooked brown rice
2 small sweet peppers, seeded and chopped reasonably fine
6 or 7 spring onions, sliced3 sticks of celery chopped finely3 ozs (about 100 grams or less)of small fresh mushrooms (raw) sliced thinly
3 ozs of roasted hazelnuts, pecans or any other nuts - sesame seeds are also very tasty
3 or 4 tablespoonfuls of French dressing
2-3 tablespoonfuls of fresh herbs, well chopped

Roast the nuts lightly before chopping. Allow them to cool.
When the rice is cool add all the ingredients and toss them together well.
Add a light garnish of herbs to the final dish before serving.
 
Saute some onion, celery, and carrots in olive oil until soft. Add garlic, ginger, and any herbs or spices you'd like, then add rice and stir together. Cover and cook on low until rice is hot.

Delicious rice the next day. Not sure what to call it, but i make it all the time and love it
