What makes an apple a "cooking apple"?

I'd like to make an apple cake with cream cheese frosting and it called for "cooking apples" and I'm not sure what that means? Apples are 99 cents a pound right now...so I was just going to get the red ones that are on sale haha!
 
Cooking apples are generally ones like Granny Smith (the most popular) and other firm fleshed apples.

I use the ones I like the taste of.
