What legit business would you start for one thousand dollars?

I have been laid off for a few months now and I am going to be getting a small inheritance. I am wondering if there are any LEGITIMATE businesses that I can start from my home for around one thousand dollars? I am not interested in get rich quick schemes, mlm, or anything illegal. I live in Oregon.
 
A Cleaning Business would be a good idea. Get contracts with local businesses to clean their offices. Very simple business to start and has low expenses.
