What kind of fish is that fish on Finding Nemo?

It's a Yellow Tang. These fish need a saltwater set up, the fish itself in terms of cost is just pennies compared to the hundreds, even thousands, you can spend on the set up it needs! Tangs are active, for one of these ideally you will need a tank over 55 gallons. And contrary to the film, it won't get obsessed with bubbles...

Bubbles is a yellow tang. He is a salt water fish and needs housed in such. He can be kept in a 30 gallon (one of the only stergeon fish that can) and have a happy home. Salt water is not that much more especially a 30 gallon than a fresh water since you can use a fresh water set up only with salt water. A 30 gallon tank, a HOB filter, heater, normal tank lights and you are pretty much good to go. Live sand and rock is NOT needed in a salt tank. You will need to get a salt water test kit, hydrometer and salt. Other than that it does in no way cost thousands of dollars for a salt tank.

Yellow tangs depending on where you buy them will range in price from $15 for a small the highest I've ever seen a yellow tang was $50 but this one was very large and in a LFS in an expensive part of town. typically they go for $19.99.

Yellow tangs eat algae and plants. The more algae in the tank the better. They will also eat frozen greens like emerald green seaweed and lettuce. Fairly hearty fish as well and a great community fish.
 
I think it's a grouper. That's a generic fish so go with it. I once was looking at a grouper at an exhibit and it actually turned it's eye and looked at me. A fish that makes eye contact. I was taken aback because making eye contact for a fish is unheard of. At least I've never heard of it.
