What kind of Bicycle should I get?

You failed to mention your budget. How much do you have to invest in it? The bigger the budget, the better the bike. If you don't have a helmet, deduct $40 from your bike budget.

Around $300 - Trek 3700, Jamis Trail XR, Giant Boulder

Around $400 - Trek 3900, Specialized Myka HT or Hardrock
 
I am looking for something that I can use for dirt street, bike trails, and mountain biking, that is easy for Beginning Riders to "get it", but can keep it long enough without getting board with it either for at least a few years.

Any Suggestions? ...
I also want one that has GOOD Shock Absorbany and that is Very Comfortable on the Toosh! (Even if I have to buy a different seat for the bike, if so do you have a suggestion as to what kind, maybe a link?)

Look for a comfort mountain bike, stay far away from Walmart and other department store bikes. You can also use a hybrid on the street and bike trails. Visit the local bike shops and tell them how you want to use the bike.
 
to keep your "toosh" comfortable, you don't need a really soft seat. what is needed is proper riding style. most of your weight should be put on your legs and a little on your arms dispersed over the handlebars and a little on the seat.

i would recommend looking into giant bicycles. they use quality components and i have been riding the same bike for 4 years and am not board with it.

to find the right bike, you need a bike that fits you. i suggest going to a local bike shop and talking to those guys. they are paid to help people. and they just want people to ride, no matter where they get the bikes from.
