What is your favorite way to make fish or deer?

Ok, now I'm almost scared to ask this, but what is your favorite way to cook fish i.e. catfish, bass, gar and deer for consumption? I personally rather enjoy the tenderloins of deer, but I want to know what is the best way of cooking these meats in your own experience. I have tried boiled, baked, fried, and grilled with the fish. I also have tried a lot of different ways with venison.

So, what is your favorite? Don't forget to add other species like trout, salmon, or elk, fallow, or sika. I'm looking to try new things, and I would like some great detail, how was it when you first put it in your mouth, did you savor it? Would you run out and buy it? I want some ideas.
 
The very best way to eat deer is this:
heat up small amount of beacon grease. Season deer that has been cut into peices. Fry deer in grease with no flour or batter. Do not over cook just a few minutes on both sides. This is the best way to cook deer so you can enjoy the gamey flavor of the meat. I want my deer to taste like deer not chicken. I always cook deer meat this way.
Fish, try using dry flour instead of corn meal as a batter. Flour seems not to be as over powering than meal. And nothing is better than a fried wild turkey.
