I've been in quite a few Chinese and Japanese restaurants where they put a little dish of cabbage (sometimes a few carrots, too) soaked in what tastes like vinegar on every table as soon as you sit down.
I've asked and they won't tell me how to make it, just that it soaks for over a week. Does anyone know what the name of this "cabbage salad" is or what's in it? Is it just rice vinegar and cabbage?
ETA: When I pull up Kimchi recipes and pictures, nothing looks anyhting like it. Most pictures show it being redish, but what I'm talking about just looks like wet cabbage and tastes vinegary. Is this still an alternative form of Kimchi?
