What is the significance of the word 'urban' in student, indie culture?

Walking around Birmingham I saw 'Urban Pie Shop', a trendy pie & mash shop, 'Urban Roots', a hairdresser, and 'Urban Outfitters' clothes shop...
Doesn't the term 'urban' go against their greenpeace beliefs?
