what is the K in temperature for stars?

Those temperatures are measured in Kelvin units, rather than Farenheit or Celsius.
 
That is the Kelvin temperature. The Kelvin degree is equivalent in size to the Celsius (or Centigrade) degree, but at a place in the scale 273 degrees from the Celsius temperature. Zero degrees Celsius is 273 degrees Kelvin.
