double degree in Law and Accounting? Would having a double degree in law and economics enable me to be a tax lawyer? Or should I go for law and accounting?

Which one offer a wider range of job opportunities? And what kind of job opportunities for each of them.
 
If you want to be a tax lawyer, it is best for you to go with Law and Accounting.

Economics doesn't really deal with tax, it only studies the effect of tax increase and decrease on the economy. You will not be able to become a tax lawyer with economics.

Accounting will enable you to study tax, companies, auditing etc. in much more detail. So Law & Accounting is the best option.
