Well, lets start with the type of fish. I only eat Red Snapper, Dolphin (Mahi), Grouper, Trout, Chilean Sea Bass, Pompano, or Tilapia. I usually season it with something spicy like blackened, cajun, jerk, creole and grill it. I also love to sqeeze lemon or lime on it. I have a good low carb recipe I'll give you.
2 rinsed Tilapia fillets
Minced garlic (1 clove or a spoonful out of a jar in water)
4 thin slices of lemon
6 grape tomatoes cut in 1/2
5 green olives cut in 1/2 (or capers)
Parsley, salt, and fresh ground pepper to taste
Preheat oven to 350. Spread tinfoil out on baking sheet and spray with Pam. Lay down the slices of lemon and put the fillets on top of the lemon slices. Season fish, and top with tomatoes, garlic, and olives.
Fold in sides of foil, then top and bottom to make a sealed little pack. Bake for 30 minutes give or take depending on oven. Until the fish flakes. I eat it with a side salad! Yum!
