This is how I make mine and they always come out very juicy, I get rave reviews at work when I bring them for potluck lunches.
4 skinless boneless chicken breasts
2 heaping tbs minced garlic
3/4 cup Italian style bread crumbs
1/2 cup Parmesan cheese
1 stick butter
In a bowl, place your bread crumbs and cheese and set aside.
Take a fry pan and melt butter on very low heat add garlic.
Preheat your oven to 350 degrees. Take a baking dish and spray with a little cooking spray. Take your chicken and dredge it thru the butter/ garlic mixture coating both sides. Then dredge it thru your breadcrumb /cheese mixture. Place in baking dish. Do the same with the rest of the chickens. After all chickens are in the baking dish, cover the chickens with any remaining butter and garlic.
Place in oven for 30-45 minutes. No need to turn the chicken. Serve with your favorite side dishes.
