What is the best way to cook a pork chop with bone in ( 3 to 4 pound ) roast ?

This is a single piece of meat right?

I'd slow roast it. Season it to your likings and put in a roasting pan (if you don't have a roasting pan a cake pan will work) add water and cover. Roast in the over for 6-8 hours, add vegetables like potatoes and carrots the last 2 hours. If you are serving non-tuber veggies wait until the last 45 minutes to 1 hour to put in.....make sure the roast doesn't go dry while cooking.
 
If you are doing this in the oven,

In a roasting type pan, Place the roast in the pan, fat side up.
Place 1/2 cup of water in the bottom of pan.

On the roast you can place any herbs or spices you like and rub into fat. A few things I like on a pork roast are.

Salt & Pepper
Sage,
Garlic and or Onion Powder,

Place in a 350F Dg. oven for 30 min. per pound or 170 degrees on a meat thermometer. Remove from oven and allow to set for 10-15 min's before carving.

You can also make a nice au jus out of the juices on the bottom of the pan and removing fat.
