Well, its like the chicken and the egg.
He's telling the truth but because he's telling the truth his nose wont grow. Because his nose doesn't grow, it means he was lying so his nose does grow. But then he's telling the truth because his nose has grown so his nose wont grow and the cycle starts again.

Normally that would be a paradox, but he may be predicting the future rather than lying. In that case it doesn't grow
Well,lets take it from both perspectives.If he is saying that than
1:He cannot be telling the truth because if he is than it won't grow longer therefore it's a lie and will grow longer.
2:If he is telling a lie than it will grow longer than it just changed to the truth so it won't grow longer.
