What is that yummy lettuce in restaurant salad called?

I can never find the kind of lettuce i want at the grocery store, they have a million blends and i don't know which one I want. what kind do they use in restaurants that's so nice and bright and crunchy?
 
could be :
field greens or baby greens
baby spinach
baby romaine
frisee (very lacy, almost "hairy", pale green/white)

All can be found in regular grocery stores, although baby romaine is probably the hardest to find.
 
It could be Endive, which is very dark green and extremely crunchy - best mixed with other greens though (good with Bibb or Boston lettuce). The basic green lettuce that's really crunchy is Romaine. To recrisp lettuce that's gotten wilted in the refrigerator: put it in a bowl with water to cover it, and about 1/2 c. vinegar. Let it sit for about 10 min; drain & rinse and chill......
