My fiance and I love overeasy eggs. We eat pretty healthy during the week, but this is our only indulgent item for saturday mornings. But I wanted to know the best healthiest oil to cook eggs in? I tried coconut oil but my fiance didnt like it because he said it tasted like a salty pinacolada. Olive oil turns my eggs a yellowish greenish shade. I was cooking eggs one time with corn oil, and my future mother in law being a food police said its not healthy and the plastic container that the corn oil was in is toxic and creates hormonal problems. I need a oil that is healthy, yet is perfect for overeasy eggs? Any suggestions?
