What is a good, unusual recipe for salsa?

Mango Salsa

2 cups mangoes chopped
1/4 cup chopped cilantro
4 tbsp red onion minced
2 jalapenos diced (seeds removed)
juice of half a lime
1 1/2 tsp salt
1/4 tsp sugar

Mix altogether and allow it to sit and marinate for 30 minutes before serving.
 
Salsa Borracha (Drunk Salsa

INGREDIENTS (Nutrition)
4 fresh tomatoes
10 fresh jalapeno peppers, halved lengthwise and seeded
1 (12 fluid ounce) bottle Mexican beer
1/2 cup water, or as needed
1 clove garlic
1 slice onion
salt to taste


DIRECTIONS
Place the tomatoes and jalapenos into a saucepan, and pour the beer over them. Add enough water so that the tomatoes and jalapenos are covered. Simmer over medium heat until soft. Remove from heat, and let cool slightly.
Transfer the tomatoes and jalapenos to a blender, and add the garlic and onion. Pulse until well blended. Add some of the cooking liquid to help with blending if necessary. Taste, and season with salt.
 
Fruit Salsa and Cinnamon Chips

2 kiwis, peeled and diced
2 Golden Delicious apples - peeled, cored and diced
8 ounces raspberries
1 pound strawberries
2 tablespoons white sugar
1 tablespoon brown sugar
3 tablespoons fruit preserves, any flavor

10 (10 inch) flour tortillas
butter flavored cooking spray
2 cups cinnamon sugar

In a large bowl, thoroughly mix kiwis, Golden Delicious apples, raspberries, strawberries, white sugar, brown sugar and fruit preserves. Cover and chill in the refrigerator at least 15 minutes.
Preheat oven to 350 degrees F (175 degrees C).
Coat one side of each flour tortilla with butter flavored cooking spray. Cut into wedges and arrange in a single layer on a large baking sheet. Sprinkle wedges with desired amount of cinnamon sugar. Spray again with cooking spray.
Bake in the preheated oven 8 to 10 minutes. Repeat with any remaining tortilla wedges. Allow to cool approximately 15 minutes. Serve with chilled fruit mixture.
 
I have a company salsa-contest coming up (May 5th) and I'd really like WOW everyone with a unique recipe. My original plan was a watermelon salsa but they don't appear to be in season.

Sour Cherry Salsa
2 1/4 cups fresh or frozen pitted sour cherries (3/4 lb)
1 tablespoon sugar
3 tablespoons finely chopped red onion (1/2 small)
1 large fresh jalapeño chile, finely chopped, including seeds (1 1/2 tablespoons)
2 tablespoons fresh lime juice
1/4 cup chopped fresh cilantro
1/2 teaspoon salt
If using fresh cherries, coarsely chop, then stir together with sugar in a small bowl until sugar is dissolved, about 5 minutes. If using frozen cherries, thaw in a small bowl, reserving any juices in bowl, then coarsely chop and stir together with sugar in same bowl. Stir in onion, jalapeño, lime juice, cilantro, and salt and let stand at room temperature 30 minutes for flavors to develop. Keeps for about 1 day.


Cucumber Kiwi Salsa
3 tablespoons fresh lime juice
1 tablespoon chopped seeded jalapeño chile
2 teaspoons minced peeled fresh ginger
1 teaspoon finely grated lime peel
2 cups chopped peeled kiwi (about 1 pound)
1 cup chopped peeled seeded cantaloupe
1 cup chopped seeded cucumber
1/2 cup thinly sliced green onions
2 tablespoons chopped fresh mint
PreparationWhisk lime juice, jalapeño, ginger, and lime peel in medium bowl to blend. Add kiwi, cantaloupe, cucumber, green onions and mint; toss to coat. Season salsa to taste with salt and pepper.

Cantalope Basil Salsa (one of my faves)
2 cups diced (1/4 inch) cantaloupe (from a 2 1/4-lb piece)
1/4 cup finely chopped sweet onion such as Vidalia
2 tablespoons finely chopped fresh basil
1 (2-inch-long) fresh hot red or green chile such as serrano or Thai, minced (including some seeds)
1 tablespoon fresh lime juice
1/4 teaspoon salt
PreparationToss together all ingredients in a bowl and let stand, covered and chilled, 10 minutes.
