what is a good salsa?

here are a few to try they are all really good...

FAMOUS SALSA

4 cups chopped peeled tomatoes
1 cup red pepper
1 cup green pepper
2 - 4 jalapeno peppers (mild = 2)
1 cup chopped onion
1/3 cup sugar or to taste
1 clove garlic, chopped
1 tsp salt
1 1/2 cups cider vinegar
1 1/2 cups tomato paste
1/3 cup lemon juice
herbs to taste

Blend all ingredients. Cook for 50 minutes and taste. Adjust taste if needed. Jar in mason jars.
The longer they are jarred and stored, the hotter the salsa will become.. so be careful!


SALSA CON QUESO

1 block Velveeta cheese
1 12 oz can refried beans
1 12 oz jar salsa
1 lb browned ground beef
1 cup milk

Combine all ingredients into crockpot. Heat on high for 1-2 hours. Makes enough dip for about 10 people.

EVERYONE'S FAVORITE SALSA

8 large tomatoes
3 bell peppers (green, red, yellow, orange)
one medium sized onion
2-3 jalapeno peppers, to your taste (remove seeds for mild salsa)
1 bunch fresh cilantro
3 tbsp. lime juice (can use fresh squeezed)
3 tbsp. lemon juice (can use fresh squeezed)
salt to taste

Chop these all individually in food processor and combine as chopped.
These are all approximate amounts. You can change amounts of ingredients to your taste.

Use rubber gloves when cutting large amounts of peppers and onions or skin will burn!

5 large tomatoes diced
1 tbs fresh cilantro or celery leaves chopped
1 bunch green onions chopped
2 white onion chopped fine
2 or 3 bell peppers chopped
1 or more jalapeños seeded and chopped depending on taste
2 cps celery finely chopped
2 tbs lime juice
1 tbs salt or to taste.
3 tbs garlic

Mix all ingredients and let sit in fridge for a few hours, Very good
