1. "Or crust and sugar over, like a syrup sweet"
2. "Maybe it just sags, like a heavy load"
 
1) In America, we don't say "a sweet." Sweet, to an American, is an adjective, not a noun. That being said, when I read your first phrase, that is what I thought. No image, but that it's an adjective.

2) A belly on an overweight person, sagging over his belt.
