What if someone forwards an email that you did not write saying that it was from you?

Is it possible to forward an email to someone and change the original text so that it looks different.

e.g. if I (mary) write to bob and say - 'I will send you 25 boxes'. Then bob forwards a reply and he has changed my text to say 'I will send you 100 boxes'.

Is this possible?
