What happened to my jeep's 4WD?

I have a 2000 Jeep Cherokee Limited. It has full time 4WD (no manual shifter) It has been running fine but I took it out on a beach and got stuck. When i tried to get myself out the front wheels weren't moving and it was definitely favoring the left rear wheel (it spun more than the right) Once I got off the beach it ran fine and has run fine since then. What happened? Can I fix it?
 
When in AWD mode, the transfer case is 'open', meaning it will spin a tire on which ever axle is easier to turn. In your case, it was a rear tire likely because there is less weight on the rear axle (engine is in front so it is harder to turn a front tire).

The NP242 transfer case that you have has the ability to be 'locked' so that the front and rear axles pull equally. You needed to lock the transfer case in to 4wd mode, using the shifter lever on the center console.

Your Jeep is operating normally.

If you don't have any transfer case shift lever, then your XJ is 2wd, not 4wd.
