Temperature is the issue, use platters of ice to keep things cold, chafing dishes to keep things hot. Outdoor weddings can be amazing. That's a lot of work for you and you have a lot to do already. Pay a local teen or two to serve for you and pick up plates, etc.
I'm a vegetarian but I'm seeing shrimp and figs and just special salads and fruits. It should look lavish and amazing, but it doesn't have to break your budget. Use lots of different colored foods.
