What Food/Lifestyle to gain the mose muscle? (Specific question)?

Okay so this is a personal question, so for the experienced answerers it'll be easy for someone to reply lol

So i've always toyed with the idea of getting into shape, but never followed through completeley, because i lack an actual plan of action to cover all aspect of the transition. I'm 22 now, and i feel now is the right time to shed those late teen/early 20's puppy fats and really make the most of the body i could have.

This is where the specifics come into it. I'm not the average guy, i'm 6'10, not exactly fat, not exactly thin, just a little puppy fat around the stomach now, and just googled, i'm around 20 stone = 280 pounds. Now i don't know if it's an exact fact or if i made it up myself, but i tell myself i can probably get away with eating a little more than most, but don't get me wrong, i don't eat a lot, but i can get hungrier than most if i've eaten the same amount of food as an average person. I know the kind of exercise i should be doing outside of a gym, as i can't afford gym fee's over here, they're extortionate, but obviously any websites people think of to help, greatly appreciated. As for food, that's where i hit a brick wall, as i don't really understand carbs and stuff like that. Never really having eaten any red meat if i'm honest, i know that really helps in muscle gain? But was wondering if someone could go out of their way to give me a lengthy answer to my request.

Now i'm 22 and ashamed to say, i'm envious of that Taylor Lautner kid from the Twilight movies, he's like 6 years my junior and managed to gain all that muscle, and yes i know it wont happen over night, but a starting point would be good.
