What does the bible verse, "God created man in his image,” (Genesis 1:27) mean?

It is not a physical thing, but He created Man/Woman with the capacity to be kind, loving, caring, everything that God is, but all powerful and capable of creation! yes, we are still capable of these things but often choose not to be like this, reject his Gifts and even when we can be all these things, our kindness, loving, caring etc are imperfect!

It does not relate to racism.

Man lost that potential when Adam and Eve sinned, and for thousands of years God made many rules and regulations (all of them practical and sensible - for example the food laws - without refridgeration pork goes off incredibly quickly, and the lifestyle of the pig was dirty, so therefore it was dangerous to eat! Hence the no pork law.

Then He sent Jesus, who as it was prophesied several thousand years earlier in Isiaiah, was no great beauty or remarkable in physical appearance, but eminated the Holy Spirit of God by his whole demeanor, actions, compassion, teaching.....
 
We were created as natural beings with three parts; body, mind and spirit. Regardless of race, all of God's children are body, mind and spirit.Christ himself attained perfection with all the characteristics of God, but we fall short of God's standard. Praise be to Him for coming down and offering redemption for all. His plan is the greatest of all plans. And in His glory, we shall be glorified ourselves in eternity.
