Just a couple of things to think about:
-Make sure that people come in and find a seat first. People like to know they have a seat before they get a full plate of food. No one wants to be roaming around trying to find somewhere to sit when they've already got their food. Also, people will need to be seated to be dismissed table by table to get up and go to the buffet... You can't have 150 people standing in one line for food. There has to be some sort of organization!
