What do you do when your mum is terrible at cooking?

I know this sounds really mean, but my mum is an absolutely appalling cook and I don't know what to do about it? Everything is either overcooked or undercooked and she never seasons things properly. I really want to eat healthily, but I end up living on takeaways and ready meals to avoid her cooking. She's very territorial about her kitchen and won't let anyone else do the cooking so its like we are stuck.

The worst things are here Sunday roasts! Luke warm watery bisto gravy, cremated meat, and sloppy vegetables that have been boiled for hours. My heart sinks when I see she's preparing one and she gets all offended when I don't eat it. The problem seems to be that she doesn't eat green veg and doesn't know how its meant to taste, by the time she's finished its boiled to mush and tastes of nothing! I only found out I liked stuff like broccolli and cabbage when I went to a friends house for tea years ago and being too polite to say I didn't like it, tried it and found that when cooked correctly they are delicious.

We all try and suggest that maybe things should be cooked differently but she ignores us and snaps at us and tells us to go away. She is now wondering why my brother eat vegetables in restaurants and not at home, probably because her's taste like shit!

What do people suggest? How do we approach it sensitively?
