What do I cover a painted wooden buffet with so things won't stick to it?

Your frames won't stick to the freshly painted wood as long as the paint is dry!! Give it two days to cure and your worries are over.
I have been a union painter for 20 yrs and have never seen that happen.
 
We have a built in buffet shelf in our dining room. We think it was originally made of MDF. The paint was chipping away so we sanded and repainted it. Now we are afraid that if we put anything on there long term, it will stick to the paint. I usually put frames on this long shelf and they will probably bond to the wood b/c it's newly painted. Should I cover with some kind of lacquer or polyurethane so it will dry with a nice solid finish?
 
Your Last line Highlights One Solution...or You Could Buy Some Contact Adhesive Decorative Plastic..Which Is Cheap, Comes in All Designs and Is A Durable Wipe Clean Surface....or You Could Tile It Using A Rounded Plastic Edge Strip....or You Could Buy Some Wood Veneer and Stick It On. or You Could Paper it With Washable Paper !!
Mind You By The Time You've Read All This The Paint Will Probably Have Gone Hard Enough !!! Ha ha !
